ARMENIAN POMEGRANATE BULGAR SALAD

Armenian and Middle Eastern cracked wheat salad.
Full of nutritional goodies.

INGREDIENTS ...

1 1/2 c #1 fine Bulgar
1 c warm Water
2 c ripe Tomatoes / diced finely
12 Scallions / diced finely
1 very large or 2 regular large Red Bell Peppers - or any color you like.
2 to 3 cloves of Garlic / minsed
1 large Pomegranate / seeded
1 very small red Onion / diced finely
1/4 c to almost 1/2 c of Light Olive Oil / start with the 1/4 c first, then add more if needed.
1 to 1/2 large Lemons / squeezed and using the juice - all depends on you how sour you like.
1/2 bunch fresh Mint / diced

SEASONINGS ...

1 1/2 Tbs. of Pomegranate Molasses / diluted in the 1 c warm water from above measurement.
t tsp. dry Mint
1 1/2 tsp. or less Aleppo Pepper
1 tsp. dry Oregano
