Baked Eggplant & Greek Kalamata Olive Cheese Boreg's

DOUGH ..

3 1/2 c to 4 c Flour / sifted - 1/2 c more if needed
1 Egg / beaten
1 1/2 tsp. Sugar
3 Tbsp. Butter / softened
1/2 c light Extra Virgin Oil
1 c warm Whole Milk
1 instant Dry Yeast
11/2 tsp. Salt
1 tsp. Rosemary
2 tsp. Dry Oregano leaves
3 Tbsp. Shredded Parmesan cheese or dry Parmesan cheese
2 to 3 Green Onions / Diced
1 c Persian Basil or Regular Basil / diced

PREPARING BOWL FOR DOUGH...
Coat bowl with 2 tsp. Tahini Paste + 1 tsp. Extra virgin oil. Spread the inside of your bowl with your fingers, all around the bowl from top to bottom.

1 large Eggplant / sliced 1/4 " thick and fried till browned
1 c Greek Kalamata green and black pickled olives / chopped coarsly
2 Tbsp. of French Onion Dip
1 Tbsp. Persian Basil / or regular basil
2 handful fresh baby Spinach Leaves
1 cup almost Persian basil leaf the purple color preferably, or use basic basil
1 c Ricotta Cheese
2 tsp. Extra virgin oil
Makes all well and place in refrigerator.

Preparing the DOUGH ...

Place flour in the bowl and add salt and mix well. Make well in the center. Add in remaining ingredients from above. Mix with a wooden spoon until well combined and no longer can be mixed with this spoon. Turnover on a light floured surface and need foot between 10 to 15 minutes by hand. I usually do not use KitchenAid when I prepare this dough.
In another deep bowl, coat the bowl with 2 teaspoons of tahini sauce with 1 teaspoon olive oil, and place you do in the bowl. Dress hilltop with olive oil and end with hands spread oil to cover the surface of your dough entirely.
In a very large grocery double bag, place a kitchen towel folded and put in the bowl of dough.
Twister bag loosely closed and place a towel again over the nylon bag. Place in a warm place for at least one to two hours for two double.

When doubled inside turnover on a very light floured surface without needing the dough roll couple of times and shape into a long log. Divided into 8 sections. Make them into a bowl and place them on a floured surface and cover with nylon and a towel to keep them warm and away from draft. Follow the pictures are rules for the designs and how to make it or make your own designs filling depends on the shape you desire to make.

Preheat oven on 350 410 minutes before placing your loaves inside. Bake between 15 to 20 minutes depending on your oven heat. With some ovens and weather depending on how cold or how hot it is it might take 5 minutes longer to brown. The color should be a very rich deep golden brown.
