KALAMATA OLIVES & CHEESE GARLIC LOAF

INGREDIENTS...

Heavy Duty Mixer!! Kitchen Aid

Almost 4c Flour/ if needed more ,to have the dough like the picture? Than add 1 Tbsp. At a time while mixing.
3 Eggs / room temperature
2 c warm Milk/ 100F
1 5 oz. Fresco Cheese / cut into small cubes
1/2 c Vegetable Oil
1 tsp. Baking Powder / sifted with the flour and 1/8 tsp. Salt & 1/8 tsp. Black Pepper.
1 envelope Active Dry Yeast
6 roasted Red Peppers / fresh or Jared ready / diced
3/4 to 1 c Black Kalamata Olives / coarsly sliced
3/4 c Green stuffed Olives Kalamata/ coarsly sliced
1to 2 heapping tsp. Of ready pickled chopped Garlic
1/2 c or more flour to dust the olives.
1 tsp. Dry Dill Weed
1/2 tsp. Dry Thyme
2 tsp. Roasted Sesame Seeds
Raw Sesame as much as needed to sprinkle on top.
1 whole Egg beaten for top coat before baking.

DIRECTIONS

Slice and dice your peppers coarsly and the olives.Mix the garlic and place in a strainer to rid the liquids. Once all drained, mix with flour. Make sure everything is coated with flour. Set aside.

Begin by placing your three eggs in the bowl and mixing it until it is light and fluffy.
Add in your roasted sesame seeds and your salt and black pepper. Now add in your salt and mix for a minute.
Add the warm milk , the thyme, yeast and sugar and mix. Cover the bowl with a towel and let stand for about 7 to 10 minutes for the yeast to proof.

Once the yeast has proofed add in your dill weed and mix a second.

Now gradually add in your flour while mixing on medium speed. Make sure to scrape the sides of your Bowl during the process. Continue adding the rest of the flour until the texture looks as in the picture. Disco is a little hard but yet soft and kind of sticky that's the way it should be.
Dust the board, and turn dough over and knead 3 minutes. Then flour the bowl and place the dough ball in and cover with plastic wrap, and place in microwave if you have one. If not then cover with a heavy towel over and place in oven.
Keep it in the warm place for at least one and a half to two hours and or until doubled in size.

Once doubled, grab the sides with your fingers of the dough stretch it out and bring it to the center. Do they step around the bowl until all the dough has been moved from the sides to the center then turn it over on a floured surface.
Prepare your filling. With flour, dust thoroughly , the olives and peppers, garlic,and the cheese, until all coated well. Set aside.

Cover your baking sheet with parchment paper. Place the loaf on top, and brush with egg. Sprinkle with sessamies and cover with towel.
With a very sharp knife or razor, slice gently the top. Cover with a towel, and let rise again in the onen until doubled.

Pre-heat your oven to 425 degrees Fahrenheit. Place the loaf in the center of ovan. With a spray bottle of water spray the sides back and bottom of your oven to create Steam and close the door quickly. You must bake with steam remember to get a crunchy top period every 10 minutes spray with water the inside of the oven while baking and to the bridge is baked completely.
